Milk Based Sweets

Kheer

A sweetened product having a thick consistency and it resembles rice pudding commonly consumed in the West. When small cubes of chhana substitute rice it is called chhana kheer.

Method of preparation:

Milk is simmered on medium heat and coarse rice , that has been previously soaked in water, is added at 6 –8% levels and sugar at 5-6% of the milk. The mixture is simmered till rice softens up and shows signs of gelatinisation, leading to substantial thickening. Chopped nuts and cardamom are usually added.

Palpayasam

A sweetened product having a thick consistency and it resembles rice pudding commonly consumed in the West. When small cubes of chhana substitute rice it is called chhana kheer.

Method of preparation:

It is made in the same manner as kheer, but sugar/jaggery, flavours and saffron are usually added. Rice is fried in ghee until slightly brownish and is then cooked in three times the amount of water. Milk is added when sufficiently cooked and heating / stirring continued till rice softens up without losing its shape. Sugar at 6% and flavours are added and the product is allowed to cool. Vermicelli can be substituted for rice.
