COCONUT

Coconut Vineger

Vinegar is a natural product obtained through acetic acid fermentation. Natural vinegar can be prepared from coconut water and many other sugary materials. Synthetic vinegar is prepared from acetic acid. Coconut water is a waste product from copra industries. Coconut water is a major food base of vinegar but as its sugar content is very low (only about 1%) sugar needs to be added to coconut water to bring the sugar upto 15 %. CFTRI has developed a fast process for obtaining vinegar from coconut water using a simple inexpensive vinegar generator. The vinegar generator assembly comprises a feed vat, an acetifier and a receiving vat for collection of vinegar. Venegar generator can be locally fabricated. Vinegar has extensive use as a preservative in the pickle industry and flavoring agent in food processing sector. Now natural vinegar enjoys export market in place of synthetic vinegar.
