Coconut Milk Products

It is produced by spray drying coconut milk. It has a shelf life of over 6 months. Mainly produced in Philippines, Malaysia and Sri Lanka. The by product of this industry is de- fated coconut, which is a low priced substitute for desiccated coconut. Spray dried coconut milk powder if dissolved in water will result in coconut milk which can be used in place of fresh coconut milk for food preparations/beverages in households and food industries by dissolving it in water. Coconut milk powder is being produced in Kerala and it is marketed in 100 gm packets. This will give the consumer the same amount of milk from 6-7 average size coconut.

CFTRI has developed a process for production of dehydrated coconut milk powder which retains the natural flavour and texture of coconut milk. It has good keeping quality & greater convenience.
